This is nice whether you do carrots alone, or mix it up with some green beans too.



  • 1 ½ lb. small carrots (and/or green beans)
  • 1 tbsps. butter or olive oil
  • 1 tbsps. honey
  • 2 tsp Dijon Mustard
  • 1 tbsp finely chopped parsley
  • Salt & freshly ground black pepper


  1. Blanche the carrot (and green beans if using) in boiling water for 2-3 minutes.
  2. Transfer to a frying pan and pan fry in the butter for 2-3 minutes, add the rest of the ingredients and fry for a further minute.
