This is nice whether you do carrots alone, or mix it up with some green beans too.
- 1 ½ lb. small carrots (and/or green beans)
- 1 tbsps. butter or olive oil
- 1 tbsps. honey
- 2 tsp Dijon Mustard
- 1 tbsp finely chopped parsley
- Salt & freshly ground black pepper
- Blanche the carrot (and green beans if using) in boiling water for 2-3 minutes.
- Transfer to a frying pan and pan fry in the butter for 2-3 minutes, add the rest of the ingredients and fry for a further minute.
