Leche Flan – a Filipino version of crème caramel – is a custard-based dessert with a layer of caramel on top (or rather underneath, until it is turned out of its mold).

It is made by making a simple sugar caramel, which in left in the bottom of the mold. The custard is added then it is steamed until set.
