A sweet soft and fluffy bread, with a toffee/caramel centre and coated in crispy bread crumbs.

No one seems to know the origin of the name. I wonder if they started (in much the same way as ensaymadas were originally a pastry, but ended up being made with a brioche type dough) if these weren’t originally more like croissants, but over time became more bread like. There are some rolled up bread rolls, but nothing that closely resembles them in Spanish cuisine.

They use an enriched dough – with eggs butter and milk – and should be light, soft and sweet.
