Which are also known as Pancakes, American Pancakes or drop scones.

Ingredients:

  •  300 g self-raising flour (or 300 g plain flour + 4 tsp. baking powder)
  • ½ tsp. salt
  • 60 g of sugar
  • 270 ml of milk
  • 2 large eggs, lightly beaten
  • 2 tbsp. melted butter (allowed to cool slightly)
  • oil, or extra butter for cooking
  • 150 g self-raising flour (or 150 g plain flour + 2 tsp. baking powder)
  • 1/4 tsp. salt
  • 30 g of sugar
  • 135 ml of milk
  • 1 large eggs, lightly beaten
  • 1 tbsp. melted butter (allowed to cool slightly)
  • oil, or extra butter for cooking

To serve

Just a few suggestions – really you could pretty much go with whatever you like!

  • butter & maple syrup
  • Sugar and lemon juice
  • Nutella, or similar chocolate spread or sauce
  • Fruit/berries and ice cream.

Method:

    1. Sift the flour, baking powder, salt and caster sugar into a large bowl.
    2. In a separate bowl or jug, lightly whisk together the milk and egg, then whisk in the melted butter.
    3. Pour the milk mixture into the flour mixture and, using a fork, beat until you have a smooth batter. Let the batter stand for a few minutes.
    4. Heat a non-stick frying pan over a medium heat and add a little oil, or a knob of butter. When it’s melted, add a ladle of batter.
    5. Wait until the top of the pancake begins to bubble, then turn it over.img_2085
    6. Cook until both sides are golden brown and the pancake has risen to about 1cm (½in) thick.
